PEP Club Members Create Healthy Alternatives for Dessert Recipes

White County Medical Center associates recently celebrated National Nutrition Month; member of the PEP Club held a recipe contest in which participants were challenged with creating a healthy alternative for their favorite dessert recipe.

A panel of WCMC Dietitians narrowed the contest entries down to the top three recipes, which were prepared by the Dietary Department for a PEP Club Taste Test. Members sampled the three desserts and voted for their favorite.

The winning recipe was “Apple Pie Bites” submitted by Outreach Education Coordinator Dee DeLoach, RN.

“We all enjoy a sweet treat on occasion, but so many of us are also looking for ways to cut calories,” DeLoach said. “I have found that this simple dessert recipe provides just the right amount of sweetness to satisfy my cravings without a lot of extra calories I don’t need. Also, I substitute fresh peaches for the apples when they are in season.”

Dee’s Apple Pie Bites

Ingredients:
2 small Granny Smith apples, peeled and sliced
1 can of crescent rolls
2 tsp. cinnamon
3 packets of Splenda
1 tsp. sugar
½ c. water
low-fat spray butter

Directions:
Preheat oven to 350 degrees. Pull apart each crescent roll and flatten out. Combine cinnamon and Splenda in a small dish. Place apple slices in the crescent rolls and fold crescent rolls over, pinching edges to seal and place them in a glass baking dish. Mix water, 1 tsp. of sugar and leftover cinnamon mixture to pour over the mini-pies and spray lightly with butter spray. Bake for 30 minutes.

The PEP (Positive Empowered People) Club is the associate fundraising committee for the White County Medical Foundation in which WCMC associates and volunteers donate money to the Foundation that helps fund important projects, such as building the Cancer Center of Excellence.
